NinebarkBread & Coffee Checking hours Pre-order bread

Sourdough bakery and coffee bar, downtown Bozeman

Bread that takes its time.

Every loaf at Ninebark rises for 36 hours on a starter we have fed every morning since 2019. Come in for a cardamom bun and a cortado, stay for breakfast, and reserve your weekend loaves before they are gone.

      Our story

A starter named Gus and a 4 am alarm

Mara and Eli Lindqvist opened Ninebark in 2019 with one deck oven, a secondhand espresso machine, and a jar of starter Mara had carried from her grandmother's kitchen in Minnesota. The starter is called Gus. He gets fed at 4:15 every morning, seven days a week, before anyone makes coffee.

We buy hard red winter wheat and rye from Montana farms and have it stone-milled close to home, which is why our bread tastes a little nutty and a little sour, and why it keeps on your counter for four days. Our coffee is roasted in small batches for us and pulled on a two-group machine that is older than our baristas.

"We are not trying to be fast. We are trying to be worth the wait."Mara Lindqvist, head baker

Snow-covered Bridger Mountains above a snowy field outside Bozeman

        Rye season is back

The first real snow hit the Bridgers last week, which in this bakery means one thing: dark rye goes back on the Saturday list. Our seeded rye is 60 percent whole rye, with sunflower, flax, and toasted sesame folded in the night before. It is dense in the best way, slices thin, and holds up to a smear of butter and a fat slab of cheddar. It also keeps for a full week wrapped in a towel, which makes it the loaf to buy before a hut trip. We bake about forty each Saturday through March. Reserve one in the pre-order builder by Thursday at 6 pm, or come early and take your chances.

Blueberry and raspberry danishes lined up in a bakery case on checkered paper

        Why things sell out

We get the question most days around 10 am: why not just make more danishes? The honest answer is that laminated dough is a two-day process and our counter fits exactly four sheet pans. We would rather sell out of something great than hold a tray of tired pastry until closing. What we can do is tell you sooner. The menu on this site now shows a sold out flag the moment a tray is gone, and Eli updates it from the bench by text. If your favorite is marked out, check the weekend pre-order list, where a few pastries can be reserved with your bread.

        Huckleberry week, by the numbers

We just wrapped our busiest week of the year. The numbers: 112 pounds of wild huckleberries from two pickers we have worked with since we opened, 940 huckleberry danishes, 310 jars of compote for the overnight oats, and one very purple dish sink. Thank you to everyone who lined up on Main Street before we unlocked the door on Saturday, and to the farmers' market crowd who found us on the way to the park. The berries in the freezer will carry the danish through about mid November. After that it is cranberry and orange until next summer, and we think you will like that one too.

Gus the sourdough starter turns seven this week. He has outlived two mixers, one espresso grinder, and every houseplant in the front window.
